FIRST COURSE
TAMAL DE FLOR DE CALABAZA Y QUESO FRESCO
Mexican Masa filled with Flor de calabaza, fresco cheese, and steamed in corn husks
VOLCAN BLANCO
agave flavor with hints of grapefruit, black pepper, cherry, and pear
SECOND COURSE
SALPICON DE RES
shredded skirt steak, onions, tomatoes, hot chiles, avocado slices
SOLECITO
refreshing and fruity drink with a tropical twist made with Volcan blanco
THIRD COURSE
ALBONDIGAS
beef meatballs stuffed with hard boiled eggs, rice, in a savory chipotle sauce
VOLCAN REPOSADO
cooked agave and notes of herbs and fruitiness to shine through flavors of honey, smoke, and dried fruits
FOURTH COURSE
GORDITAS RELLENAS DE CHILE VERDE
stuffed pockets of corn dough, filled with borracho beans, cheese, marinated pork in salsa verde

vibrant and refreshing tequila-based drink often considered a more complex version of the Paloma

SOPAPILLAS
fried pastry covered in cane sugar accompanied with a compote made with fresh peaches with cinnamon, lemon juice
